
Squash blossoms + pizza? That’s what I Googled and this is one of the recipes that came up. I’d always wanted to work with squash blossoms and here was the chance to incorporate them into our Friday pizza night. Sadly, I think I missed what is so exciting about them. Maybe it was the pesto or the fresh mozzarella or the prosciutto but the squash blossoms seemed to get lost among the other toppings. I think going more simple would have been better but since they’re not exactly cheap, I’m not sure when I’ll work with them again.
I think their highest and best use is stuffed, but I couldn’t tell you with what. I am always impressed with any use of a flower in food prep!
I think you’re right. Sometimes the flavor of the “squash” in the blossom can get lost amid the other flavors on a pizza. It’s pretty delicate. Try stuffing them next time. Thanks for the link to my blog!
